gARAM MASALA RICE / QUICK PULAO MADE WITH LEFTOVER RICE 

EASY AND SIMPLE GARAM MASALA RICE / QUICK PULAO MADE WITH LEFTOVER RICE  / GARAM  MASALA CHAWAL

A quick, flavourful dish made from fresh or  leftover rice. this garam masala rice goes well with any veg or non veg curry or  gravy. It tastes almost like a biryani or pulao . This recipe is similar to masala bhaat .

INGREDIENTS

  • Ghee + oil – 2 or 3 tbsp
  • Any cooked rice or leftover rice [ basmati or regular ] – 4 or 5 cup
  • Whole garam masala – 4 peppercorn + 1 bayleaf + 2 cloves + 2 green cardamom + cinnamon stick + 1 black cardamom
  • Jeera –  1 tsp
  • Broken  cashews + raisins  – 2 or 3 tbsp
  • Chopped coriander leaves + mint leaves – ¼ cup
  • 3/4 or 1 tsp  garam masala powder or biryani masala powder
  • Sugar – ¼ tsp
  • Salt to taste

METHOD

Heat  ghee + oil in a pan.

Once hot , lower the flame and add all the whole garam masala + cashews .

Stir fry till golden .

Now add the garam masala powder or  biryani masala powder + salt + sugar and give a mix.

Add the leaves and give a mix .

Immediately add the rice. Stir gently and mix well till the rice is well coated with the masalas .

Simmer for a min if using leftover rice from fridge , else off the flame.

Serve hot with any side accompaniments .

This rice is perfect to serve with the chicken curry or with simple raita. You can call this rice something in between biryani and pulao.
