Black urad dal rice
BLACK URAD DAL RICE / URAD DAL RICE /ULUNDU CHORU / ULUNDHU SAADAM
BLACK GRAM is an easily available, staple ingredient across all Indian kitchens. Also known as urad dal, it is a rich source of protein and other valuable nutrients like calcium, potassium, niacin, vitamin B, these beans offer rich therapeutic value.
Endorsed by ayurvedic and allopathic practitioners alike for its healing properties, its regular intake prevents a sudden spike in the levels of blood sugar, controls hypertension and protects heart. It is a wonder medicine for those suffering from joint pains and various bone-related disorders.
A warm massage with these beans soothes swollen tissues. Black gram also serves a potent beauty and hair remedy and aids in battling various skin related issues.
INGREDIENTS
- Short grain rice [ not basmati ] – 1 cup
- Split black urad dal – ½ cup
- Oil – 1 tbsp
- Asafoetida – ¼ tsp
- Jeera – 1 tsp
- Garlic – 6 or 8
- Fenugreek seeds – ¼ tsp
- Salt to taste
- Grated coconut – 3 or 4 tbsp
- Water – 41/2 to 5 cup

METHOD
Clean the dal and rice .
Dry roast the dal for 5 mins on low flame .
Wash and soak dal and rice together for ½ an hour. Rinse once again.
In a wide pan, heat oil .
A jeera and let it splutter .
Add the asafoetida and give a mix .
Add soaked dal rice mixture and gently stir fry for a minute so the mixture is nicely coated with oil.
Add water + salt + garlic + fenugreek seeds and give a stir .
* the quantity of water will vary according to the quality of rice used.
Cook on medium flame , half covered.
Once the water reaches the dal level , turn the flame to lowest .
Now cover it tightly and cook on lowest flame for 10 mins.
Off the flame and let it rest for 5 mins minimum .
Open after 5 mins and give a gentle stir.
Sprinkle the freshly grated coconut all over .
In different parts of Tamil Nadu they are served with different side dishes .
Some serve with black sesame chutney , some serve with non veg gravies etc .
I prefer with non veg gravy .
BLACK SESAME CHUTNEY RECIPE TO ACCOMPANY THIS DISH –
Dry roast ¼ cup black sesame seeds on medium heat till it splutters , remove and keep aside . Dry roast 1 dry red chillies for a few seconds .Grind roasted sesame seeds + roasted red chilli + tiny piece of tamarind + salt to a smooth paste by adding little water .
NOTES –
- In south they make it in sticky consistency . Also they use par boiled rice [ ukdhda chawal ] which takes time to cook. So in most of the house it is cooked in cooker .
- Here in this recipe I have cooked in open pot using regular kolam rice which takes less time .
- You can also cook iN cooker or cook the way you do with your regular rice .
- You can soak the urad dal for more time if you want.
- We can add upto 12 garlics .
BENEFITS –
Black gram or urad dal holds a high protein value than most of the legumes. It is also an excellent source of dietary fiber, isoflavones, vitamin B complex, iron, copper, calcium, magnesium, zinc, potassium, phosphorus which offers a myriad of healing health benefits.
Adding black gram to your daily diet adds bulk to the stool, eases bowel movement. It helps in treating constipation, colic and hemorrhoids and improves liver functions . However, do not give black gram to babies as it is heavy to digest and cause stomach pain.
In females, consuming urad dal dishes during menstruation reduces abdominal and muscle cramps or dysmenorrhea. It also addresses the problem of scanty period and regularizes the menstrual cycle. Roasted black gram mixed with jaggery powder increases lactation in the new mothers.
